Using Garlic – To Cook Fish

The general idea is to add a few vegetables and some spices and herbs and then put in a slow oven – say 160 degrees, or gas mark 4.

Place the fish in the container and and some vegetables. These can be any 2 or 3 of: onions, spring onions, mushrooms, sweet peppers, courgettes, aubergine slices, celery, tomatoes, or anything else you prefer.

garlic-9-w200-h200Now add flavourings. I always use garlic and chillie. The chillie can be a chopped chillie or I like to use chillie seeds. They keep well, and you can either use them as they are, or I always have some in a jar I have covered with olive oil. I then sprinkle a few drops of this onto my salmon. Add a couple of garlic cloves (the small single garlic segment), peeling them first. Or slice one peeled clove and sprinkle over the top of the fish.

Now you can either add a splash of wine or a few drops of soy sauce or balsamic vinegar. Add a few grinds of fresh pepper, and any herbs you have to hand.

Alternatively you can add nothing as there is a lot of flavour in the fish itself. Just mix it up – and vary it each time you prepare it.

Now sprinkle over a lttle olive oil, seal up and put in the oven.

Cooking Time

If in foil, this will take around 15-20 minutes; in Pyrex, the glass needs to heat up too, so allow 5 minutes longer.

This recipe has the great benefit of giving you both garlic – excellent for health – and omega 3 from the salmon. A nice healthy meal.

Enjoy with any steamed vegetables or a mixed salad.
